Chai with Jai

Homemade chai is so, so easy, and so simple to concoct to one’s own taste preferences…

Me, I don’t like it very sweet (same with hot chocolate).

I never measure, but lately, here’s what I do:

Boil some water. (Step one for many a thing.)

Add black tea. Loose tea, of course best, but a couple of tea bags for a big mug’s worth of chai will do.

Add spices of preference when you add the tea. This week I’ve been adding black peppercorns, cardamom, fennel seeds, cloves, cinnamon, and powdered ginger. 

Let that boil for a couple of minutes, then add milk of choice, let it return to a boil for a minute or two,

then strain….
